Chef Nic Watts INCA 2.0 opened its doors in Aucklands' Ponsonby Central in March 2022. 
Offering Nikkei cuisine - a melting pot of Latin America meets Asia -
the uniforms incorporate the bright colours and textures of the Peruvian spirit.
